If you are new to keto, you might not have discovered yet that the loss of having a crunchy snack can cause sleepless nights and tears in the corner. Or so I have heard… These keto crackers will definitely satisfy that need for crunch and keep you full at the same time all while keeping that digestive system cranking all day!
My mom has been dabbling in the keto ocean lately and since she has celiac, she inherently is already making gluten free items. She is an amazing baker and she was working on a recipe for some crunchy seed crackers. She is familiar with the Nordic Stone Age bread that is made entirely of seeds and thought a cracker would be made the same way.
These crackers are so yummy! They are hearty, full of fiber, yet bland enough that if you wanted to add some erythritol and cinnamon, you could make them sweet or garlic powder for savory. I am enjoying them as a small breakfast in the morning with a little almond butter on top. They keep me full until lunch and I only have 2.
Buckle your seat belt though because there are A LOT of seeds in here. The best part though is that you can easily omit or add whatever seeds you want to it. We didn’t have pumpkin seeds one day, so we tried hemp hearts. Still tasty! You can cook them a little bit longer so the tops are almost toasted and they are still amazing. This recipe makes about 28 crackers and they are fairly thick at almost 1/3″ thick. You can make them as thin or thick as you want and just adjust the cook time so they don’t burn.
Keto Stone Age Crackers
Ingredients
- 1/2 cup linseeds/flax seeds 2 Net
- 1/2 cup chia seeds 1 Net
- 1/2 cup sesame seeds 8.5 Net
- 1/2 cup sunflower seeds 7 Net
- 3/4 cup pumpkin seeds (pepitas) 3 Net
- 1/2 cup hemp hearts 1 Net
- 1 cup warm water
- 1 Egg
- 1 tsp salt
Instructions
- Preheat oven to 320.
- Add all the seeds and salt to a bowl and mix up.
- Add warm water and egg to seed mixture and mix well.
- Let it sit for 15 minutes.
- Spread out onto a baking sheet covered with parchment paper. Try to use a silicone spatula or it will stick.
- Slice into squares (can use pizza cutter) while it is still wet on the tray before baking. Makes approximately 28 crackers.
- Bake for 1 and 15 minutes hour. If you want more toasted try going 1.5 hours. It is all preference at that point.
