Keto Danish Pork Patties - "Karbonader"

This Keto version of my favorite Danish dish is super easy to make and a delicious and quick meal idea.

Ingredients

  • 1 lb Ground Pork
  • 1 Egg
  • Salt and Pepper to taste
  • 2 cups Crushed Pork Rinds
  • 2 tbsp Unsalted Butter

Instructions

  • Form 6 patties out of the ground pork.
  • Sprinkle with salt and pepper to taste on each side of the patties. NOTE- if you have to use salted butter, go easy on the salt.
  • Crush up the pork rinds using a mortar and pestle or place in a zip-loc bag and roll out with a rolling pin.
  • Beat up egg in a tray and place crushed pork rinds in another pan. Put each patty in the egg mixture and then the pork rind mixture. Make sure to try and press the pork rind crumbs into the meat.
  • Melt the 2 tbsp of unsalted butter in a pan and place the patties in the pan. Cook low and slow on medium. You don't want to burn the pork rinds.
  • Serve with roasted radishes or your favorite fatty keto side dish.
