Keto Loaded Cauliflower Chicken Casserole

Being keto for almost 2 years, potatoes are definitely one of the items that I miss the taste of. They are mostly used for just filler but I really did like the taste of them. As potato chips. As french fries. Covered in cheese. Covered in cheese and bacon. So many ways….mmm potatoes.
Anyways, I wanted to try making a recipe that used everything to make loaded potatoes but obviously minus the potatoes. Cauliflower has the odd quality where it can pretty much be used as a substitute for almost any vegetable. It does not really have that much of a flavor when it is cooked properly and it can be made into multiple consistencies.
I noticed a lot of recipes for just loaded cauliflower but because I am lazy and I just want it all in a pan…and because I am a Minnesotan and we make everything into a hotdish, I added chicken and made it a full meal!
You can add more stuff to this recipe or take things away. Whatever you like in your loaded baked potatoes. I am a simple girl and like french onion sour cream, bacon, and LOTS of cheese.

- 1/2 cup sour cream
- 4 oz cream cheese room temperature
- 1.5 cups cheddar cheese
- 1/2 cup bacon I use real bacon bits to save time
- 2 lb bag frozen chicken can use thighs for added fat
- 1 head cauliflower
- 1/4 cup green onions
- 1/8 cup green onions

- 1/2 cup cheddar cheese

- Brown thawed chicken breasts in a pan. Partially cook.
- While chicken is cooking, break up cauliflower to small 1.5 inch pieces.
- Mix sour cream, cream cheese, bacon, green onions, cheddar cheese with cauliflower and set aside.
- Remove chicken from the pan and chop up into 1 inch pieces.
- Mix hot chicken with cauliflower mixture in a baking dish.
- Bake at 350 for about 25 minutes or until cauliflower is as soft as you prefer. Poke with a fork to check.
- Add toppings, except for green onions, and up temperature to 450 or set to low broil to brown the top.
- Top with green onions before serving.
