Doing keto for over a year, you think I would learn to not just buy everything that people post that is low carb. I end up with all these items that either take way too much work to end up using or I don’t have the rest of ingredients to use the item in a recipe. This happened when I purchased coconut cream and coconut milk in a can from Trader Joe’s. I kept reading of all these delicious desserts I could make by whipping it up into a mousse, but ain’t nobody got time for that!
Then I bought some Quest protein powder because I kept hearing rave reviews on how yummy it tasted and only being 1 net carb per scoop, I had to give it a shot. Just a warning, it is sweet! Like 1 scoop is too much for a protein shake full of thick fatty cream too sweet.
I had a rare desire to experiment in the kitchen because I wanted to try the protein powder. I needed some extra fat that day since I was pretty low so I thought about adding some fatty creams, hoping for a milkshake. I ended up coming up with this delicious coconuty concoction. Boy it is delicious! And it is gone almost before I even sit down to enjoy it. All of the ingredients fit inside the large cup of a NutriBullet perfectly. This is the only tool I use when making smoothies since I find regular blenders cumbersome for just a smoothie.
This is a great recipe to make at the end of the night when you feel like grazing or short a bit on fat. It satisfies a sweet tooth as well as having 24 delicious grams of fat. It has approximately 3 net carbs if I am being generous. It can be hard to calculate heavy creams since they tend have a label that says 0 carbs or <1 carbs when there is actually a small amount. For those I just guesstimated at .5 net carbs.

Keto Cinnamon Coconut Smoothie
Ingredients
Smoothie Ingredients
- 30 mL heavy whipping cream
- 30 mL Canned Coconut Cream Trader Joe's is what I use
- 240 mL Coconut Milk 1 cup
- 1/2 scoop Quest Cinnamon Crunch Protein Powder
- 6 ice cubes
Optional Toppings
- 1 tbsp chia seeds add some calories (58) and fat (4) - 1 net carb
- 1 tbsp dessicated coconut flakes
Instructions
- Pour the liquids all together in the blender/nutri-bullet first
- Add 1/2 scoop of protein powder
- Add 5-6 ice cubes
- Blend until frothy - top with chia seeds or coconut flakes Enjoy!
