Karbonader is a traditional Danish dish that is very simple and easy to make. Growing up with a Danish mom, I ate lots of different Danish meals. My favorite is karbonader with boiled potatoes. I could eat that every day. It is a nice change from beef and chicken. I wasz always excited when my mom said she was making karbonader, which could not be said for some other Danish dishes….I am looking at you dansk bøf med løg (danish hamburger patties with onions & gravy).
Originally the dish should be half pork and half veal, but I prefer the pork.
Unfortunately being Keto now, the bread crumbs and potatoes are out of the question. However, making this a keto-friendly dish is really easy and totally tastes the same. Pork rinds all crushed up make a great substitute for bread crumbs in fried foods. Instead of potatoes, you can easily sub with any keto friendly vegetable like radishes or broccoli. Using lots of butter to cook the patties in adds a lot of fat to the dish for keto and the pork itself is really fatty.
1 pound of ground pork will feed 2-3 people depending on how much meat you eat. I usually eat 2 patties, which is 1/3 of a pound, but my husband can eat 3 patties.
Keto Danish Pork Patties - "Karbonader"
Ingredients
- 1 lb Ground Pork
- 1 Egg
- Salt and Pepper to taste
- 2 cups Crushed Pork Rinds
- 2 tbsp Unsalted Butter
Instructions
- Form 6 patties out of the ground pork.
- Sprinkle with salt and pepper to taste on each side of the patties. NOTE- if you have to use salted butter, go easy on the salt.
- Crush up the pork rinds using a mortar and pestle or place in a zip-loc bag and roll out with a rolling pin.
- Beat up egg in a tray and place crushed pork rinds in another pan. Put each patty in the egg mixture and then the pork rind mixture. Make sure to try and press the pork rind crumbs into the meat.
- Melt the 2 tbsp of unsalted butter in a pan and place the patties in the pan. Cook low and slow on medium. You don't want to burn the pork rinds.
- Serve with roasted radishes or your favorite fatty keto side dish.
