Hey…yeah I am back. I have been gone a while. I thought I would come back with a bang! A Korean keto bang! And boy can it be a spicy bang!
In starting keto all over again my goal is to move into a different type of keto food and asian food seems to have grabbed me hook, line, and sinker. There are so many keto asian foods already readily available. If you like kim chi, unlike myself, you already have a great side dish.
I thought I would start a bit simple with my big comeback and give you some simple Korean Barbecue. Easy marinade that does not have to sit all night, but if you want it to it still can.
The culprit that is usually hidden in a lot of asian marinades and sauces is some sugar to add sweetness but at this stage in the keto game that is an easy switch up. Erythritol is the easiest for me as I usually have that on hand. You could use whatever sweetener you prefer.
Soy sauce can also be a heavy hitter depending on your reasoning for doing keto. If you are doing it to lose weight then soy does not really need to be an issue. If you are doing keto to reduce inflammation then soy sauce is usually a no-go. You can swap it out for liquid aminos or coconut aminos, but they do have more carbs.
The only item on the list that can be harder to come by, depending on where you live, is the side pork. Rural MN does not have side pork as readily available as places closer to the cities. But whenever I see it at our little local grocery store I stock up. If you don’t know what side pork is, it is basically just bacon before it becomes bacon and it is usually quite a bit thicker than regular bacon. Sometimes you can buy a slab of side pork/pork belly that you can slice yourself and freeze.
Anyways, I won’t dilly dally and keep talking I will just post the recipe since I know that is what you actually came here for. Not to read my rambles.
Keto Korean Barbecue
Ingredients
- 1.5 pounds pork belly also called side pork
Marinade
- 1/4 cup chopped green onions
- 1 tbsp minced garlic
- 1/2 tbsp minced ginger
- 2 tbsp Huy Fong Chili Garlic Sauce founds in most stores - red jar with green lid
- 3 tbsp erythritol
- 3 tbsp soy sauce can sub liquid or coconut aminos - up carb count
- 2 tbsp sesame oil
- 1 tbsp sesame seeds can omit if really watching carb count
Instructions
- Mix all marinade ingredients into a bowl until a combined.
- Chop pork belly into 2 inch sections and put in gallon zip loc bag.
- Pour marinade all over pork in the ziploc bag and massage until all pieces are covered. Marinade for 30 minutes.
- Pan fry until pieces are caramelized.
- Serve with cauliflower rice or with Perilla leaves. Traditional Korean BBQ is one piece of pork wrapped in a Perilla leaf. 1 ounce of leaves is about 1 carb.
