When I started out doing keto, the first website and Youtube channel that I kept coming back to was Keto Connect. They have a great selection of simple recipes for people just starting out on keto and have great informative Youtube videos. I would definitely check them out.
This recipe is adapted and adjusted from a Keto Connect High Fiber Muffin post they made a while back. It is also in their cookbook, which sold on Amazon. For them it was meant to be a breakfast muffin that was filling and delicious. I made it many many times but kept adjusting and adding different ingredients to make it sweeter or taste differently. I knew I needed some pumpkin spice in my life sooner rather than later.
This recipe it very high fiber because it uses flax meal and oat fiber as the main ingredients but it is also high fat with the eggs and heavy whipping cream. I really like these as a quick breakfast snack with melted butter or just cold and a little treat. They are not overly sweet like most muffins or cupcakes you would try in the store and the pumpkin spice is more mellow. I use the Archer Farms Pumpkin Spice just for reference.
Keto Pumpkin Spice Flax Muffins
Ingredients
- 1 cup flax meal
- 1 cup oat fiber make sure it is oat FIBER not oat FLOUR
- 9 tbsp heavy whipping cream
- 4 eggs
- 4 tbsp butter melted
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- 6 tbsp erythritol
- 1 tbsp pumpkin pie spice I use Archer Farms from Target
Instructions
- Melt the butter and mix together the erythritol and pumpkin pie spice.
- Add eggs and vanilla and mix well.
- Combine all of the dry ingredients and mix up.
- Combine wet ingredients with dry ingredients.
- Scoop into muffin tin. Baked on 350 degrees for 15 minutes or until tops are golden brown. NOTE - can also mix some erythritol and pumpkin spice and sprinkle on top of the muffins before baking.
- Let cool a little bit, slice and serve with a big fat tablespoon of butter.
