Keto Jalapeño Cheddar Chicken
I have seen a lot of keto jalapeño popper chicken roaming around Pinterest. This recipe stemmed from that but I made some changes because I am not actually a fan of jalapeño poppers to begin with. Too much cream cheese in one bite for my liking. This is more like a casserole where the cream cheese jalapeño mixture is all mixed up with the chicken and ooooooh is it yummy. So creamy and rich with just a hint of spice.
Most of the recipes I see the mixture is placed on the top of a whole chicken breast. I am not amazing at cooking chicken so this is much more foolproof in my opinion.
It is supposed to be around 6 servings, but my husband and I eat half casserole in one sitting right after it is done. You will not be disappointed. And it is very filling.
